Could someone explain why the conjugate acid of a strong base such as NaOH doesn't affect pH? Thanks!

NaOH is a strong base, so it's going to highly prefer being in its dissociated form. The conjugate acid is too weak to contribute to the pH because equilibrium is shifted so far forward (think of Kb).
