Acid and base Strength

What do the strength of acids and base tell us and what is the relationship of acidity to a molecular structure?

The stronger the acid, the more easily it donates H+. The stronger the base, the more easily it accepts H+. When looking at the structure, a weaker/more polar the bond with H, the stronger the acid. The more negative/more able to accept H+, the stronger the base.

When bonds are more polar/the electronegativity difference is greater (ie. HCl) this is meant to be a stronger acid because it releases the proton more easily, however in previous units we learned that the more ionic character a bond has the stronger it is. Why is this?
