Why does an anion from a weak base form an acidic salt?

I think it's usually easier to understand it from the acid point of view and then understand basic conditions. So if we have a weak acid, weak acids are less readily to give off protons but it's conjugate base can accept proton easily. So if you have a weak base it won't readily accept that proton, so its conjugate acid would be stronger and thus donate a proton easier and this can be seen in the form of an acidic salt.

An anion from a weak base would form an acidic salt because the cation from the weak base would be reacting with OH- while the anion, which has a negative charge, would be forming a salt with the H+ protons. This would thus make the salt being formed acidic as it is the conjugate acid of the weak base.
