How does AlCl3 go to Al(H2O)6 3+ in water? I understand why the Cl doesn't affect the pH but where does the (H2O)6 come from? I'd appreciate any help!

The (H20)6 comes from Al's capacity to create a coordination compound.

If you could please help remind me, how is Al able to create a coordination compound?
