Sodium Acetate: NaCH3CO2 (s)
CH3CO2-(aq) + H2O(l) --> OH-(aq) + CH3CO2H (aq)

In this reaction why is Na+ not included?

Sodium is not included because it is a spectator ion, so we just tend to leave it out.

Correct, the NaOH that forms will completely dissociate into Na+ and OH- so we leave it out of the reaction entirely.
