Heating curves represent the temperature of a system as a function of the amount of thermal energy/heat added. Heating curves are used to figure out the values of the melting/fusion point and vaporization/condensation points, which are when the heating curves have a slope of zero. When the curves have a slope, the phase remains constant but the temperature changes. The heating curve also gives us qualitative information on an object/system's relative heat capacity. The steeper the slope is, the lower the heat capacity is.
