That heating curve is specific to water. Other molecules would have different heating curves and heat capacities.

The heating curve we were introduced to in class was one specific to water. All molecules have their own heating curves

Typically, we interchange between two reactions for heating curves:
1. q=mc*deltaT (within a phase)
2. q= n*deltah (the change from one phase to another)
