What's the reasoning behind why work and heat are not state functions?

They both depend on the path that was taken to get to the initial state to the final state.

work and heat are related to the path taken to the final state, not simply just the final state

Work is not a state function because it depends on the path from the initial to final states of the reaction. Heat is not a state function because it depends on the paths of each individual state.
