If we are to assume there is constant pressure, do we assume that P is equal to 1atm?

If it is not otherwise stated, yes you assume the pressure is equal to 1 atm.

Why do we assume that pressure is equal to 1 ATM when the pressure is constant?

If another pressure value is not stated anywhere the p is 1 atm.

At standard pressure, the pressure equals 1 atm, but unless otherwise specified it can be different.
