You will be able to tell which method to use based on what information you are given in a problem. If you are given values of bond enthalpies, you will use that method. If you are given standard enthalpies of formation, use that method. If you are given the enthalpy values for certain reactions that can be combined to produce the one you are looking for, use Hess's Law.
