I think that, for the scope of this class, the specific heat capacity of a substance will always be provided, given that the specific heat of a substance is determined through experimentation.

Will the heat capacity always be the heat required to raise the temperature by 1C only?

Yes, you are correct in saying that the heat capacity would always be the heat needed to raise the temp by 1C.
