Saturated vs unsaturated fats
Why are saturated fats generally found in solid form and unsaturated fats in liquid form (at room temperature at least)?

Unsaturated fats are liquids at room temperature because there is at least one double bond. Any non-single bond creates a kink in the structure, not allowing the molecules to crystalize easily.
In contrast, saturated fats are straight chains and pack together much more tightly.

Saturated fats are solid under room temperature and unsaturated fats are liquids under room temperature is due the fact that saturated fats has greater intermolecular force and thus higher melting point.
Saturated fats contain only singles bonds, so their structures are straight Carbon chains. The molecules are closer to each other and packed tightly, which increases dispersion force. However, since unsaturated fats contain double bonds, there are kinks in the structure, which lowers the dispersion force.
Thus, saturated fats has higher melting point than unsaturated fats, so they are solids under room temperature.

saturated fats are all single bonds, so they accomodate more hydrogens. with the extra hydrogens, the molecule is more squished together, and more dense in a sense, so they are solid at room temp
