Naming Compounds (# and -)

I know she said that the number associated with the substituent should be the lowest number either counting from the left or right. But when you are given the name and asked to draw the structure, how would you know if you should count either way.
And is it important to add the '-' after every substituent? Like 3-ethyl-5-methyl-heptane or 3-ethyl 5-methyl heptane

To answer your first question, it doesn't matter which way you draw it because if you think about it it would be the same you would just have the molecule turned around. The number really only matters for a location on the chain not from which side it belongs because four from the left would be four from the right if you flip the molecule over.
