ethyl methyl ether IUPAC

Why is the IUPAC name methoxyethane? Why don't we consider the alphabetical priority of ethane?

It is named this way because when naming ethers the shorter of the two chains becomes the first part of the name with the "-ane" suffix of the alkane changed to -oxy, and the name of the longer alkane chain forms the suffix of the name of the ether.
