How do we know when to use hybridization?

Hybridization will most likely be asked. Just know how to mix your valence electrons to understand the concept itself.

If the question asks what is the hybridization of the overall molecule or the specific atom, then you would be required to use hybridization.

is it helpful to use hybridization even if its not asked to?

Hybridization helps in generally understanding of how orbitals are made suitable in order to pair electrons so that chemical bonds can form with other atoms. Just know the concept behind it because this topic is just to test your knowledge of how bonds can be made. It will be a supplement to a more overarching question on the test.
