If it was solids and liquids, then there would not be an equilibrium constant. There is no such thing as a concentration of a solid. Additionally, for pure liquids, they do not react significantly in the reaction. This means that the amount of pure liquid in the reactants is almost the same as that in the products and so they eventually cancel out in the ration of products to reacts. Essentially, it is just unnecessary to use them in the calculation.
There are very very few reactions (if any at all) in which a pure solid and liquid react to yield another pure solid or liquid. If a pure solid and liquid did react, the resulting product would be dissolved to some extent in the pure liquid and thus have a concentration which would appear in the equilibrium equation.
