Unless otherwise stated are we suppose to assume we start with zero product when doing the ice box for the "initial" section.

Yes, that is correct. Try to use what is given to you in the question. If there is no product, assume that the reaction will shift to the right.

yes, just be careful because some problems will give concentrations/values for product and reactant and in those cases you have to solve for Q to find out which direction the reaction is favoring before finishing the ice table to solve the actual problem.
