In the homework the textbook often assumes something is an ideal gas or the pressure is constant. How do we know when we can make assumptions like those?

Generally, we will be treating things as ideal gases. Questions often have clues to tell you if there is constant pressure.

These assumptions are usually made to simplify the concepts, and you should be told usually if you aren't working with a gas in ideal conditions. As for constant pressure, that sometimes is required (like in measuring enthalpy).
