Interaction between Dipole Moments

The interaction that happens between Dipole Moments is what keeps the negative side attracted to the positive side, but will we need to know how they are attracted together, like the force of the two atoms being attracted and how much energy it would take to separate them?

The energy to separate two atoms isn't a value you will have to memorize. Rather if it is needed in the context of a problem, it will most likely be given to you.

Although I doubt we will be expected to memorize the exact values of specific dipole interactions, it is good to know that generally dipole-dipole interactions are around -2 kJ/mol.
