I know this is a broad question, but why is it important to know about conjugates? What do they tell us about and why do we need to know about the conjugate seesaw?

Conjugates are useful to know for setting up buffer solutions.

Conjugates are also good to know for weak acids and bases; the conjugates tell you which reactant/products are related in the equation.
