Most of the examples we see in the book show water in the liquid state. The phase of water is determined by the temperature at which the reaction occurs. Most reactions occur at room temperature,25 degrees Celsius, at which water is a liquid. If the temperature is greater than the boiling point, then the water will be a gas.

I haven't seen combustion reactions where H2O was given as a liquid though.

In high school I was always taught that H20 was in the gas state because the fire in the combustion reaction itself was hot enough to evaporate the water, and sometimes the water condenses back to into liquid. I'm not sure, but I would just follow what Dr. Lavelle's examples say.
