Why does k have to be in [M]/s?

k (the rate constant) units depend on the order of a reaction (which can be found online). For a first order reaction the units are 1/s, for a second order reaction the units are 1/ms. as for the K (equilibrium constant) there are no units.

it doesn't have to be M/s, as it depends on the order of the reaction. It is a simple constant that relates the rate of reaction to the concentration of reactants, and so the units come from changing one to the other.

k doesn't have to have units M/s, but the overall rate does.
