Is 1-(methylethoxy)-2-methylpropane another correct/acceptable way to write 2-isopropoxy-2-methylpropane?

Of course it is, you can always use systematic naming :)

On problem set 2 number 5, why wouldn't you use E and Z notation?

For Practice Problems 1, for 2-isopropoxy-2-methylpropane why would it not be 2-isopropoxy-1,1-dimethylethane

I believe an 8 membered ring means cyclooctane. Possible larger rings include cyclononane and cyclodecane (if they're C-C single bond rings) because we are only expected to know up to the prefix for 10 members.
