Equations to know
Are ALL the formulas we need to know gonna be in the "Constants and Formulas " sheet provided for us or are there any that aren't on there nut we should know?

Yes, I agree. We will be given all the formulas that we need to know for the class but sometimes you have to combine multiple equations for one problem and you are expected to know how to use them accurately.

Will we also be given all of the enthalpy values needed to solve a problem? Are there ANY enthalpy values we should memorize (besides which ones are zero)?

I doubt that we will have to memorize any enthalpy values or heats of vaporization/fusion, but it may be helpful to have the 4.18 j/gc value handy when doing heat calculations involving water.

Based on my experience in 14A, we will be given the equations and constants we need to know and then some. So it is important to know which equations and constants we are focused on, what each variable stands for, and how the constants and equations relate to each other because some problems require more than one. After a while of using these you tend to memorize them anyways without even realizing.
