What exactly is the meaning of U being a state property?

it only depends on the current state of the system not how that state was prepared.

We can find delta U by subtracting the Initial U from the final U. We simply look at the two states, not the process of getting from the initial to the final.

A state property is not dependent on path taken to obtain that state. Additionally, state properties can be added and subtracted. This is all true for delta U.

Since U is the internal energy it is a state property because it does not matter the final or initial conditions/the path the system took to get to these results.
